One of the things I never get tired of is homemade soup. This is one of my personal favorites and is extremely easy to make.
INGREDIENTS
- 5 cups butternut squash, diced
- 1 large sweet potato, peeled and diced
- 4 medium carrots, peeled & chopped roughly
- 4 stalks celery diced
- 1 cup white onion, diced
- 4 peeled and diced white potatoes
- 2 Cloves Organic Garlic
- 1 stick real butter
- 2 cups Organic Vegetable broth
- 2 Cups Organic Chicken Broth
- 1/2 Cup Coconut Milk
- ¼ tsp ground nutmeg
- salt & pepper to taste
- 1 tablespoon Ginger powder
- 1 tablespoon garlic salt
- 1 tablespoon onion salt
- 1 tablespoon basil flakes
- 1 tablespoon rosemary
- 1 tsp Allspice
- 1 tsp Cinnamon
Put all the chopped vegetables in your crock pot, add vegetable broth, chicken broth, butter, garlic, spices and cover. Cook on high for 4-6 hours or until the vegetables are soft. If you have a hand blender bend in the pot. If not, put cooked vegetable in blender. Once smooth put back into the pot and add coconut milk. Add extra spices to your personal taste. This soup has lots of flavor and is very healthy.
