Lemon or Lime Meringue Pie (How to make it Gluten Free and Corn Free)

My Daughter has issues with corn and gluten, so I figured out a way to make my Lemon Meringue or Lime Meringue Pies without corn and gluten.  Let me share it with you. 

I found a lovely graham cracker style crust by Mi-Del that is perfect for this kind of pie and taste great. No Gluten, No Dairy and No Corn. So I recommend to buy the crust and make the filling from scratch.  Then you have a pie that taste great and doesn’t hurt the allergies in the house.

 

For the Filling:

Lemon Filling (For Lime use Lime juice instead of lemon and 1/3 teaspoon of blue food coloring)

6 tablespoons Mong Bean Starch(I have also used almond starch)

1 1/3 cup water

3 1/2 cup sugar

3 large egg yolks, slighty beaten

3 tablespoons butter (If you want to make this dairy free Soy Free Earth Balance Makes a great Butter Sustitute)

1/4 teaspoon lemon oil, 1 tablespoon grated lemon peel

1/2 cup fresh lemon juice (2 large lemons)

Meringue:

3 egg whites

1/4 teaspoon cream of tartar

6 tablespoons sugar

Lemon Filling:  In a Medium-sized sauce pan, dissolve the mong bean starch in the water. Add the Sugar. Cook over medium heat, stirring, until the mixture thickens and comes to a boil.  Boil stirring one minute. Remove the pan from heat and gradually add half of the hot mixture to the slightly beaten yolks, stirring constantly. Blend back into the remaining hot mixture and return to the burner. Simmer the mixture stirring for 1 minute.

Remove from the heat. Stir in the butter, lemon oil and lemon juice. Spoon the filling into the baked shell.

The Meringue

In a Large Bowl, Beat together the egg whites and cream of tartar until foamy. Gradually add the sugar while you are beating the mixture.

Spread the Meringue atop of the pie filling, using a knife spread and make waves (lay the knife on the meringe and lift it up in the air all over pie, makes waves).. Make sure it touches the crust all the way around the pie. Bake the pie in the oven at 400 degrees for 8-10 minutes. Pull out when tips are golden …  (Don’t overcook the meringue the presentation is everything)
